Prague Morning Guide
Bistro Monk

Bistro Monk

This bistro focuses on fresh ingredients and simple preparation, with an emphasis on quality and sustainability. Bread is baked in-house every morning using a long cold-fermentation method, which gives it a fuller flavour and a softer texture. It is baked in a cast-iron oven, following traditional techniques. Ingredients are sourced carefully. Eggs come from a local farm run by Mr. Král, delivered several times a week to ensure freshness. When meat appears on the menu, the restaurant works with Czech farmers and local suppliers, aiming to keep the sourcing as local and sustainable as possible.

The name “ô-mai,” which refers to dried fruit popular among students, also symbolises the spirit of youth—dreams, energy, and experimentation. The café eventually opened in June 2018, with the aim of offering a comfortable and stylish place to meet, relax, and enjoy good food and coffee. The menu includes coffee, drinks, and brunch dishes, alongside traditional Vietnamese food and beverages, reflecting the founders’ culinary background. The focus is on simple, fresh dishes and a relaxed café atmosphere.

According to the owner, the concept focuses on simple breakfasts, colourful seasonal dishes later in the day, and natural wine in the evening. Morning options include minimalist plates such as omelettes with olive oil and fresh bread, while lunch and dinner feature lighter dishes built around fresh ingredients. The café also serves homemade Nordic-style pastries, including cardamom rolls and cream-filled doughnuts, along with dishes such as butter beans, reflecting a menu that mixes Scandinavian influences with contemporary café cooking.
