
Bistro Monk
This bistro focuses on fresh ingredients and simple preparation, with an emphasis on quality and sustainability. Bread is baked in-house every morning using a long cold-fermentation method, which gives it a fuller flavour and a softer texture. It is baked in a cast-iron oven, following traditional techniques. Ingredients are sourced carefully. Eggs come from a local farm run by Mr. Král, delivered several times a week to ensure freshness. When meat appears on the menu, the restaurant works with Czech farmers and local suppliers, aiming to keep the sourcing as local and sustainable as possible.
